Alba 1836 - Countryard

An entirely fresh enterprise on our shores. Alba 1836 is the collaboration between Matteo Trabaldo Togna and Alessandro Frau (chef-owner of the award-winning Acqua in Phuket), and is committed to bringing a sophisticated and modern Italian dining experience to Singapore.

Ambience: You won’t find shabby chic here. Instead colonial architecture and raw brick walls are juxtaposed against pure lines in the furniture and fittings. The colours and textures – from the staff uniforms (from Armani Exchange) right down to the bread baskets – are elegant and refined.

Food: The menu is inspired by southern Italy, which is only natural as Fra and chef de cuisine Luca Piras hail from Sardinia. It’s hard to find anything that isn’t good but we love the ravioli agnolotti stuffed with burrata cheese and black truffle slathered in a deep, hearty braised veal ragout sauce (S$35). The pecorino cheese and fig salad served with a honey chestnut sauce (S$22) was also a joy to sink our teeth into.

Drinks: The floor-to-ceiling wine cellar at the entrance catches your eye, but more impressive is the Enomatic system that dispenses wine from the bottle using inert gas preservation, which allows the wine to remain intact for three weeks – a hefty investment that shows the ristorante is serious about delivering quality.

Alba 1836 - White trufflesOctober marks the start of the white truffle season, the time of the year when the rare mushrooms are showcased on dishes, signifying luxury to even the most jaded plates. The white ones are only available a couple of months in the year, almost exclusively from Alba, Italy (the city from which restaurant Alba 1836 takes its name). Black truffles are in mass production in China but the white ones have maintained their elusivity and exclusivity, making them one of the most revered ingredients in the culinary world.
